Ingredients:
3 c mozzarella cheese, shredded, divided
¼ c Parmesan cheese, shredded
15 ounces ricotta cheese
½ c diced onion
1 large Egg
3 garlic cloves, minced
½ teaspoon dried oregano
24 ounces marinara sauce
16 ounces ground beef, 85% lean
12 lasagna noodles, cooked to package instructions
1 teaspoon sea salt, or to taste for red sauce
¼ c parsley, chopped, plus more to garnish
½ teaspoon black pepper, or to taste
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
Add the noodles and a bit of salt, then cook for a few minutes until al dente. Drain and rinse the noodles with cold water.
Place a Dutch oven on the stove and turn the heat to medium-high.
Add the ground beef, then cook for a few minutes until crumbly and brown.
Add the onion, then sauté for 2 minutes or until soft.
Add the garlic and sauté for a minute or until aromatic. Sprinkle salt, oregano, and pepper.
Add the marinara sauce, then stir until well blended. Simmer everything for a few minutes.
Remove the Dutch oven from the stove.
Get ½ cup of the mixture and pour it into the prepared casserole dish. Spread it evenly.
Add ricotta cheese, ¼ cup Parmesan cheese, ¼ cup parsley, 1 ½ cup of mozzarella cheese, and egg into a large mixing bowl. Whisk everything until well blended.
Add the cooked noodles onto a large baking sheet and arrange them in a single layer.
Add ¼ cup of the cheese mixture on top of the noodles and spread it evenly.
Top each noodle with the meat sauce and spread it evenly. Roll and add them to the prepared casserole dish.
Add the rest of the sauce on top of the roll-ups and spread it evenly.
Sprinkle a generous amount of mozzarella cheese on top.
Cover the casserole dish with aluminium foil.
Place it inside the preheated oven and bake the lasagna roll-ups for about 40 minutes.
Remove the foil cover, then broil for 3 minutes or until the cheese turns golden brown.
Remove the roll-ups from the oven and sprinkle freshly chopped parsley on top to garnish.
