Ingredients:
FOR WINGS:
2 pounds chicken wings
½ teaspoon garlic powder
1 teaspoon kosher salt
Vegetable oil
½ teaspoon freshly ground black pepper
½ teaspoon baking powder
½ cup cornstarch
1 tablespoon freshly grated ginger
FOR SAUCE:
5 small dried red chilis, sliced
3 tablespoons butter
3 cloves garlic, minced
1 tablespoon freshly minced ginger
2 tablespoons packed brown sugar
1 tablespoon rice vinegar
¼ cup gochujang
¼ cup honey
1 tablespoon low-sodium soy sauce
2 tablespoons ketchup
FOR GARNISH:
1 tablespoon sesame seeds
1 green onion, sliced
½ cup cocktail peanuts
Directions:
Place a deep pot on the stove and turn the heat to medium-high.
Add about 4 to 6 cups of vegetable oil and allow it to become hot.
Line with paper towels a large baking sheet.
Add baking powder, garlic powder, salt, and pepper into a mixing bowl. Stir until well mixed.
Use paper towels to pat dry the chicken wings.
Rub grated ginger and mixed seasonings all over the chicken.
Dredge each chicken wing with cornstarch.
Add the chicken wings into the hot oil and cook for about 15 minutes or until they turn golden brown.
Remove from the pot and transfer them onto the prepared baking sheet to drain any excess oil. Let them rest for a few minutes.
Turn the heat of the stove to about 400 degrees F.
Put the chicken wings back in the pot and cook for another 7 minutes.
Remove from the pot into a large bowl.
For the Sauce:
Place a saucepan on the stove and turn the heat to medium-low.
Add butter and allow it to melt.
Add garlic, ginger, and dried chilis. Sauté until aromatic.
Add the ketchup, gochujang, soy sauce, and vinegar. Stir until well blended.
Add the brown sugar and honey, then stir again until well mixed and thick.
Pour the sauce on top of the fried chicken wings and toss until well coated.
Scatter peanuts over and toss until well mixed.
Sprinkle green onions and sesame seeds on top.
