Ingredients:
For the Sauce
1 ½ teaspoon sesame oil
¼ c low-sodium soy sauce or Tamari if gluten-free
4 teaspoons rice vinegar
¼ c brown sugar
2 tablespoons chilli garlic sauce
For the Short Ribs
3 tablespoons olive oil split
1 ½ – 2 pounds boneless beef short ribs
6 cloves garlic
1-inch fresh ginger
8 scallions or ½ an onion
2 c beef broth split
¼ teaspoon kosher salt
¼ teaspoon pepper
¼ c flour or gluten-free flour blend if gluten-free
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Prepare the garlic, ginger, onion, and scallions. Mince, peel, and slice.
In a mixing bowl, add 1 ½ teaspoon of sesame oil, 2 tablespoons of chilli garlic sauce, ¼ cup of brown sugar, 4 teaspoons of rice vinegar, and ¼ cup of low-sodium soy sauce. Stir until well blended.
Add the short ribs into a large mixing bowl. Sprinkle about ¼ cup of flour on top and toss until well coated.
Place a cast-iron skillet on the stove and turn the heat to medium-high.
Add 1 tablespoon of oil and allow it to become hot.
Add ½ of the ribs and a bit of salt. Sear each side for about 4 minutes or until brown. Remove from the skillet onto a clean plate. Repeat the process with the rest of the ribs.
In the same empty skillet, add 1 tbsp of olive oil and allow it to become hot.
Add the onions and garlic, then sauté until soft and aromatic.
Add grated ginger, then sauté for another 2 minutes or until aromatic.
Put the seared meat back to the skillet.
Pour in the sauce over the meat as well as 1 cup of beef broth. Stir everything until well combined. Remember to submerge the meat into the sauce.
Transfer into the preheated oven and bake for about an hour.
Remove from the oven, then pour in ½ cup of broth and bake for 30 minutes more.
Remove from the oven and let the ribs rest for a few minutes at room temperature.
Serve warm and enjoy!
