I love how easy it is to cook such a delicious lasagna! I have tried a lot of lasagna recipes but this one surely got me straight to the heart! Oh, man, you are so in for a treat! Feel free to add more ingredients if you prefer. Enjoy!
Ingredients:
FOR THE NOODLES
Cooking spray
1 (8-ounces) block cream cheese
3 large eggs
2 c. shredded mozzarella
½ c. freshly grated Parmesan
Kosher salt
Freshly ground black pepper
FOR THE FILLING
1 tbsp. extra-virgin olive oil
½ medium yellow onion, chopped
3 cloves garlic, minced
1 tbsp. tomato paste
1 lb. ground beef
Kosher salt
Freshly ground black pepper
¾ c. marinara
1 tsp. dried oregano
Pinch crushed red pepper flakes
1 (16-ounces) container ricotta
1 ½ c. shredded mozzarella
½ c. freshly grated Parmesan
Freshly chopped parsley, for garnish
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Line with parchment paper a baking sheet, then apply with cooking spray.
Add the cream cheese, Parmesan cheese, and mozzarella cheese into a microwavable bowl.
Place it inside the microwave and heat it until melted completely.
Add the eggs and whisk until well combined. Sprinkle salt and pepper to taste.
Transfer the cheese mixture into the prepared baking sheet and spread it evenly.
Place it inside the preheated oven and bake for about 20 minutes or until it turns golden brown.
Remove from the oven and allow it to cool at room temperature.
Place a large skillet on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add onion and sauté until translucent.
Add garlic and sauté until aromatic.
Add tomato paste and stir until well blended.
Add the ground beef, salt, and pepper. Cook for a few minutes until crumbly and brown. Drain any excess grease.
Add the marinara sauce and stir until well combined.
Add oregano, red pepper flakes, and more salt and pepper. Stir until well mixed. Simmer for a few minutes.
Slice the noodles into two, then slice them into smaller pieces.
Spread a bit of the sauce on the bottom of the dish.
Add 2 noodles over the sauce, then top them with ricotta cheese.
Repeat the process until everything is arranged in layers.
Place it inside the preheated oven and bake for about 30 minutes or until the cheese has melted completely.
Sprinkle parsley on top.
Serve and enjoy!
