Ingredients:
2 c peeled, cored, and sliced apples
½ c walnuts
½ tsp ground cinnamon
½ c milk
3 tbsp all-purpose flour
2 tbsp butter, cubed
1 ¾ c all-purpose flour
2 tsp baking powder
½ c butter
½ tsp salt
2 Eggs
¼ c white sugar
½ tsp ground cinnamon
1 ¼ c white sugar
1 tsp vanilla extract
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Apply cooking spray in a jumbo muffin pan.
Add 1 ¼ cups of sugar, ½ cup butter, salt, sugar, and vanilla. Stir until well blended.
Add the eggs gradually and beat until well mixed.
In another mixing bowl, add ½ tsp of cinnamon, baking powder, 1 ¾ cups of flour. Stir until well blended.
Transfer the flour mixture into the egg mixture as well as the milk. Beat until well combined.
Add the walnuts and apples, then stir until well mixed.
Fill each muffin cup to about ¾ full with the mixture.
Sprinkle crumbled cinnamon over each cup.
Place them inside the preheated oven and bake for about 30 minutes or until a toothpick comes out clean after inserting it in the middle. The top should turn to golden brown as well.
Remove from the oven and allow them to cool completely at room temperature.
Serve and enjoy!
For the Cinnamon Crumble:
Add ½ tsp cinnamon, ¼ cup white sugar, 2 tbsp of cubed butter, and 3 tbsp of all-purpose flour into a mixing bowl. Stir until well combined.
