Ingredients:
½ c butter
1 ¼ c white sugar
1 tsp vanilla extract
½ tsp salt
2 Eggs
1 ¾ c all-purpose flour
2 tsp baking powder
½ tsp ground cinnamon
½ c milk
2 c peeled, cored, and sliced apples
½ c walnuts
¼ c white sugar
½ tsp ground cinnamon
3 tbsp all-purpose flour
2 tbsp butter, cubed
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Apply cooking spray in a large muffin pan.
Add ½ cup of butter, 1 ¼ cups of sugar, salt, and vanilla into a large mixing bowl. Beat until well blended.
Add the eggs gradually and beat every addition.
In another mixing bowl, add baking powder, 1 ¾ cup of flour, and ½ tsp of cinnamon. Whisk until well mixed.
Transfer the flour mixture into the wet ingredients and beat until well combined.
Add the milk and beat until well blended.
Add the walnuts and apples, then stir until just mixed.
Fill each muffin cup with the batter. Just about ¾ full.
Sprinkle each top with cinnamon-crumble.
For the Cinnamon Crumble:
Add ½ tsp of cinnamon ¼ cup of white sugar, 2 tbsp of cubed butter, and 3 tbsp of all-purpose flour. Whisk until well combined.
To Bake:
Place it inside the preheated oven and bake for about 30 minutes or until a toothpick comes out clean after inserting it in the middle. Make sure to cover the top if it starts to brown immediately.
Remove the muffins from the pans and allow them to cool on a wire rack at room temperature.
