Ingredients:
2 tbsp all-purpose flour
½ c milk, as needed
⅔ c Parmesan cheese, grated and divided
Kosher salt and freshly ground black pepper, to taste
1 c onions, minced
2 to 2 ½ pounds of zucchini
½ c uncooked white rice
2 garlic cloves, minced
5 tbsp olive oil, divided
Directions:
Prepare the oven and preheat to 162 degrees C or 325 degrees F.
Apply cooking spray or butter to a 2-quart baking dish.
Slice the ends of the washed zucchini, then divide it into two.
Grate the zucchini and place them into a large mixing bowl.
Place a large skillet on the stove and turn the heat to medium.
Add 3 tbsp of oil and allow it to become hot.
Add the onions, then sauté for about 8 to 10 minutes or until a bit caramelized.
Add garlic, then sauté for a minute or until aromatic.
Add rice, then cook for about 2 minutes. Sprinkle salt and pepper to taste.
Transfer the rice mixture into the bowl with the grated zucchini.
Add ½ cup of milk and cheese (Set aside 2 tbsp for later use.) into the bowl with the zucchini mixture. Stir until well blended. Add more seasonings if needed.
Move the mixture into the prepared baking dish and spread it evenly. Cover it with aluminium foil.
Place it inside the preheated oven and bake for 50 minutes.
Remove the foil cover, then drizzle olive oil on top and sprinkle the reserved cheese.
Put it back inside the oven and bake for another 10 to 15 minutes or until the top turn golden brown.
