Ingredients
¼ c. vegetable oil
1 pound chicken I used legs and thighs
1 ½ c. all-purpose flour
1 teaspoon celery seed
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon poultry seasoning
1 teaspoon smoked paprika
2 c. chicken broth
1 medium-sized onion, chopped
1 c. whole milk
2 teaspoons minced garlic
1 teaspoon salt
1 teaspoon ground black pepper
How to make Southern Smothered Chicken
Sep 1: Clean the chicken. In a large bowl, place 1 ½ c flour along with the seasonings (garlic powder, onion powder, salt, pepper, celery seed, poultry seasoning, and smoked paprika). Mix well until blended.
Step 2: Coat all sides of the chicken with the seasoned flour. Set aside the remaining flour.
Step 3: Into a large pan, heat ¼ c vegetable oil over medium heat. Once hot, add the chicken (by batch to not overcrowd the pan) and cook until golden brown. Set the chicken aside once browned, leaving the oil in the pan.
Step 4: In the same pan, saute the onions for about 2 minutes. Add the garlic and continue to cook for a minute more. Set them aside when done.
Step 5: To the pan, add three tbsp of the seasoned flour. Stir this in the oil, then pour in 2 c of the chicken broth, stirring constantly. Cook the gravy for about 2 minutes over medium heat, then pour in the milk. Continue to cook for another 3 minutes. Begin adding all of the chicken followed by the onions and garlic. Toss to coat the chicken well.
Sep 6: Put the lid on and cook the chicken further, turning the chicken often. This takes another 30 to 35 minutes.
Step 7: Take the pan off the heat when done, and serve the chicken right away with mashed potatoes or rice. Enjoy!
