Ingredients:
For the Beef
½ tablespoon sesame oil
1 tablespoon soy sauce
1 clove garlic, chopped
½ pound beef, cut into 3″ long thin strips (such as sirloin, chuck, short ribs or tri-tip)
½ tablespoon mirin (Seasoned rice wine, if you don’t have it, leave it out)
1 tbsp sugar
For Vegetables & Egg Omelet
½ large size carrot, fine julienne
5 shiitake mushrooms, thinly sliced (You can substitute to any other mushrooms)
12 ounces spinach (1 large bunch), cleaned well
½ medium size onion, thinly sliced
salt and vegetable oil
2 Eggs, lightly beaten
1 ¼ bell pepper, fine julienne
For the Noodles
14 to 16 ounces Korean sweet potato noodle, Dangmyun
For the Sauce
2 tablespoons sesame oil
⅓ c sugar, honey, or agave nectar (if you are using agave, add 1 tablespoon soy sauce)
½ teaspoon black pepper
⅓ c soy sauce
1 tablespoon sesame seeds
Directions:
In a large bowl, add all the ingredients for the beef. Stir until well combined. Marinate the beef.
Place a large skillet on the stove and turn the heat to medium-high.
Add 1 tsp of oil and allow it to become hot.
Add the beaten eggs, then spread them evenly to the skillet. Cook each side for a few minutes.
Transfer the omelette onto a clean plate.
Add 1 tsp of oil into the empty skillet and allow it to become hot.
Add the onion and sauté until soft. Sprinkle salt to season. Transfer onto a clean plate.
In the empty skillet, add another tsp of oil and allow it to become hot.
Add the red pepper and salt. Sauté until soft. Transfer onto a clean plate.
Add another tsp of oil and allow it to become hot.
Add the carrot and sauté until soft. Transfer onto a clean plate.
Add the mushrooms, then cook until soft. Remove from the skillet.
Add the beef into the skillet and cook each side for a few minutes until brown. Remove from the skillet.
Place a large pot with salted water on the stove and turn the heat to high. Allow the water to boil.
Add the spinach and cook until just wilted. Remove from the pot and squeeze to remove most of the liquid.
Add the noodles into the hot water, then cook until done. Drain.
In a mixing bowl, add all the ingredients for the sauce. Stir until well blended.
Slice the omelette into small pieces.
Add ⅔ of the sauce into the cooked noodles, then toss until well coated.
Add the beef and veggies, then toss again until well combined.
Sprinkle sesame seeds on top to garnish.
Serve and enjoy!
