This dish is the perfect way to cook chicken breasts! Yeah, I’m telling you. The sauce alone is more than enough for me! Feel free to add more ingredients if you want. For example, I only added ½ cup of Parmesan cheese but my advice to you is to be very generous with it. Just do it and thank me later! Ingredients:
1½ lb boneless skinless chicken breasts thinly sliced
2 tbsp olive oil
1 c heavy cream
½ c chicken broth
1 tsp garlic powder
1 tsp Italian seasoning
½ c Parmesan cheese
1 c spinach chopped
½ c sun-dried tomatoes
Directions:
Step 1: Place a large skillet on the stove and turn the heat to medium-high.
Step 2: Add in the olive oil and allow it to become hot.
Step 3: Add in the chicken breasts and cook each side for 3 to 5 minutes or until brown.
Step 4: Remove the chicken breasts from the skillet and place them on a clean plate.
Step 5: In the same skillet, add in the chicken broth, heavy cream, Italian seasoning, Parmesan cheese, and garlic powder. Whisk and cook over medium-high heat until the texture becomes thick.
Step 6: Add in the sundried tomatoes and spinach. Stir until well mixed and allow it to simmer until the spinach is wilted.
Step 7: Put the chicken back to the skillet and toss until everything is coated with the sauce.
Step 8: Remove from the heat.
Step 9: Serve them over rice or pasta. Enjoy!
