A must-try recipe that will blow your minds out! These Italian Beef Rollups are incredibly delicious!
Ingredients:
Italian Beef
½ c bold red wine such as merlot
1 14.5-ounce can of crushed tomatoes
3 lbs beef, chuck
1 tsp dry basil
1 tsp dry oregano
2 tbsp extra virgin olive oil
6 tbsp tomato paste
2 c beef stock or broth
1 large onion, sliced into thick slices
1 tsp Kosher salt
½ tsp freshly ground black pepper
Roll-ups
2 c all-purpose flour
1 tsp kosher salt
2 c leftover mashed potatoes
Other
3 c shredded mozzarella cheese
12 slices provolone cheese
½ c freshly grated Parmesan cheese
3 c crushed tomatoes
Flour for rolling the roll-ups
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Sprinkle salt and pepper over the beef, then toss until well coated.
Place a Dutch oven on the stove and turn the heat to medium-high.
Add oil and allow it to become hot.
Add the beef, then sear for about 2 minutes or until brown. Transfer onto a clean plate.
Add onions into the same pot, then cook for 2 more minutes or until translucent.
Pour in the wine, then scrape the bottom of the Dutch oven to get the browned bits.
Add stock, dry oregano, dry basil, and crushed tomatoes. Stir until well blended.
Put the beef back into the pot, then cover it with the lid. Cook for about 1 ½ hours. Flip the beef, then cook for 1 ½ more hours.
Shred the beef with two forks.
For the Rollups:
Add mashed potatoes, salt, and flour. Mix until it forms into a dough.
Shape the mixture into a log, then slice it into 12 even pieces. Roll each piece into a circle.
Knead the balls into a 7-inch circle.
Place a large nonstick skillet on the stove and turn the heat to medium.
Add the rollup and cook each side for a minute or two. Repeat the process with the rest of the rollups.
Prepare the oven and preheat to 350 degrees F.
Line with parchment paper a sheet tray.
Scatter the crushed tomatoes over the sheet tray.
Top each rollup with a slice of provolone cheese.
Fill each rollup with the warm filling, then roll each.
Arrange the roll-ups onto the prepared sheet tray.
Add the rest of the crushed tomatoes on top of the rollups.
Top each with Parmesan cheese, then bake for about 20 minutes.
