Ingredients:
1 pound ground beef
1 15 ounces can of diced tomatoes
1 pound rotini pasta
1 medium onion diced
1 small can of diced green chiles
1 15 ounces can corn, drained
1 ½-2 c Taco Blend shredded cheese
1 packet taco seasoning
Salt and pepper
3-3 ½ c water
Green onions to garnish
Directions:
Press the “Sauté” button on the Instant Pot.
Add ground beef and onions, then cook until crumbly and brown.
Add the tomato slices, corn, pasta, taco seasoning, water, and taco seasoning. Stir until well mixed.
Cover the pot and press the “Manual” button. Cook for about 5 minutes.
Do a quick release, then remove the lid. Stir everything until well combined.
Add salt, pepper, and cheese. Stir until well blended and melted completely.
Serve and enjoy!
