I love Instant Pot recipes, especially this Sausage and Rice! It will only take you 35 minutes to prepare this meal! This recipe serves 5 people so make sure to double the ingredients if you are having guests over. Enjoy!
Ingredients:
1 c long-grain rice
1 ½ c chicken broth
1 tbsp olive oil
½ tsp salt
1 lb. sliced sausage link
½ tsp smoked paprika
3 cloves garlic, minced
1 medium yellow onion minced
1 c frozen peas, thawed
½ tsp ground black pepper
Directions:
Prepare the Instant Pot by pressing the “Sauté” button.
Add olive oil and allow it to become hot.
Add the garlic and onion into the preheated Instant Pot, then sauté for a minute or until aromatic and soft.
Add the sausages, then cook for about 2 minutes or until they turn brown. Add the seasonings and stir until well blended.
Add the chicken broth and rice, then stir again until well combined.
Cover the Instant Pot with the lid, then press the “Pressure Cook” button and cook everything for about 5 minutes. Do a natural release of the pressure.
Remove the lid, then add the thawed peas and stir until well incorporated.
Cover the pot again, but turn it off and cook the peas for about 5 minutes. Give it a good stir.
Serve and enjoy!
Notes:
Feel free to cook this the night before. Just place it in an airtight container and cool completely at room temperature. Place it in the freezer.
You can use andouille sausage, smoked sausage, or kielbasa for this recipe.
Place any leftovers in the fridge and reheat when serving again.
