Ingredients:
Meatloaf:
1 lb ground beef (80 to 85 lean)
1 lb ground pork
1 onion (finely minced and divided)
1 tsp dried parsley
¼ c bread crumbs
1 tsp Italian seasoning
½ tsp ground paprika
1 c whole milk
1 tbsp Worcestershire sauce
2 large Eggs
4 cloves garlic (minced)
1 tsp kosher salt (or to taste)
½ tsp black pepper (or to taste)
1 c mozzarella cheese (cubed)
Mashed Potatoes:
2 pounds Yukon potatoes (peeled and quartered)
2 c chicken broth
2 tbsp butter (unsalted)
½ c sour cream
½ c heavy cream
salt and pepper (to taste)
Meatloaf Glaze:
½ c bbq sauce
¼ c honey
½ c ketchup
1 tbsp tomato paste
3 tbsp brown sugar
1 tsp apple cider vinegar
2 tbsp sweet chilli sauce
1 tbsp yellow mustard
Directions:
Add all the ingredients for the Meatloaf into a large mixing bowl. Stir until well combined.
Add the cheese and ground beef. Stir until well mixed.
Make the mixture into an oval shape.
Create a small boat out of the aluminium foil, then put the meatloaf on it.
Slice the peeled potatoes into small pieces, then arrange them on the bottom of a 6-quart Instant Pot.
Add the butter, broth, salt, and pepper. Put a trivet over.
Lay the meatloaf over the trivet.
Close the pot and cook for about 20 minutes on a high setting. Do a natural release.
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Remove the meatloaf from the pot onto a baking sheet.
In a mixing bowl, add all the ingredients for the glaze. Stir until well mixed.
Pour ½ of the glaze over the meatloaf and spread it evenly.
Place it inside the preheated oven and bake for about 15 minutes.
Spread the rest of the glaze over and bake for a few more minutes.
Add the mashed potatoes and cream into the Instant Pot. Cook for a few minutes.
Add the sour cream, salt, and pepper. Stir until well mixed.
Serve a slice of meatloaf over mashed potatoes. Enjoy!
