This recipe has always been a part of my family since I was little. My aunt taught me this recipe. Now, I get to share it with you as well. How awesome is that? This dish is best served over rice. The sauce alone is more than enough to tell you that you will have the best time ever! Feel free to tweak this recipe to your preference. For a spicy version, just simply add red chilli flakes. Ingredients:
3-4 boneless, skinless chicken breasts
Salt and pepper to taste
½ c honey
⅓ c soy sauce
⅓ c onion, diced
¼ c ketchup
2 tbsp vegetable oil
4 garlic cloves, minced
3 tsp cornstarch dissolved in ¼ c water
Sesame seeds & green onion for topping
Rice for serving
Directions:
Arrange the chicken into the Instant Pot.
Sprinkle salt and pepper over the chicken.
In a mixing bowl, add soy sauce, honey, oil, ketchup, garlic, and onion. Stir until well mixed.
Pour the mixture on top of the chicken.
Close and seal the pot, then cook for about 15 minutes on a high setting.
Remove the chicken from the pot onto a clean plate.
Add cornstarch and water mixture into the pot and stir until well blended.
Press the “Saute” button on the pot and cook the sauce for another 5 minutes or until the texture becomes thick.
Slice the chicken into small pieces.
Put the chicken slices back into the pot and toss until well coated with the delicious sauce.
Garnish with green onions and sesame seeds.
Serve over rice and enjoy!
