In less than an hour, you will have the best lunch or dinner ever! I am so confident to share this with you because it is one of my favourites! Feel free to tweak it a little and give it your take. Enjoy!
Ingredients:
½ tbsp olive oil
½ medium onion chopped
2 sticks celery chopped
1 lb extra-lean (95% lean) ground beef
3 cloves garlic minced
2 heaping tablespoons tomato paste
1 (28 fluid ounce) can diced tomatoes with juices
4 c beef broth
2 large Russet potatoes diced
1 dash Italian seasoning
Salt & pepper to taste
Directions:
Step 1: In an Instant Pot, add in the onion, celery, and olive oil. Turn the “Saute” option and cook for about 4 minutes.
Step 2: Add in the beef and garlic. Stir and cook for 5 minutes or until aromatic and brown. Make sure to remove any excess grease.
Step 3: Add in the tomato paste, beef broth, potatoes, sliced tomatoes, and Italian seasoning. Stir until well combined.
Step 4: Cover the pot with a lid and cook for 8 minutes on high pressure.
Step 5: DO a quick release and sprinkle more salt and pepper if needed.
Step 6: Serve hot and enjoy!
Notes:
Take note that this recipe makes 4 to 6 servings only.
Feel free to use 1 to 1 ½ pound of ground beef.
Feel free to use low-sodium beef broth.
I use a 6-quart Instant Pot for this recipe.
If you do not have an Instant Pot, you can cook this on the stove.
