This dish is so amazing! I love how all the ingredients complement each other. From the beans to the meat, everything in this bowl of lusciousness is divine!
Ingredients:
16 oz dried pinto beans
8 c water
1 tsp salt
½ lb ground beef
½ lb kielbasa, sliced
6 slices bacon, chopped
1 medium yellow or sweet onion, chopped
2 garlic cloves, minced
⅔ c water
½ c ketchup
½ c bbq sauce
¼ c molasses
¼ c packed brown sugar
2 tbsp yellow mustard
1 tbsp apple cider vinegar
2 tsp Worcestershire sauce
2 tsp chilli powder, I like to use chipotle
1 tsp paprika
¾ tsp liquid smoke
Directions:
Step 1: In an Instant Pot, add in the pinto beans, water, and salt. Stir until well combined.
Step 2: Cover the pot and turn the setting to “Manual” and cook for 25 minutes on high.
Step 3: Remove the lid and drain the beans with a colander.
Step 4: Turn the setting of the Instant Pot to “Sauté” and apply the cooking spray.
Step 5: Add in the Kielbasa and ground beef. Cook until brown and crumbly.
Step 6: Remove from the pot and set aside.
Step 7: Discard the grease from the pot.
Step 8: Add in the onion and bacon. Saute for 1 minute or until crispy.
Step 9: Add in water and scrape the bottom to get the brown bits.
Step 10: Add in the rest of the ingredients and stir until well combined.
Step 11: Put the beans back in the Pot as well as the sausage and ground beef. Stir until well combined.
Step 12: Cover the pot and pressure cook for about 15 minutes.
Step 13: Add in ¼ of water and scrape the bottom again to get the brown bits.
Step 14: Serve and enjoy!
