Serve this Bourbon Chicken with rice and you have yourself a meal to remember! By the way, you can add your preferred herbs for garnish. I prefer green onions because I love them! Ingredients:
2 pounds boneless, skinless chicken thighs (or breasts)
½ c apple juice
½ c Bourbon
¼ c soy sauce
½ c light brown sugar
¼ c ketchup
2 tablespoons honey
½ teaspoon crushed red pepper flakes
4 cloves garlic, pressed
½ teaspoon ginger
3 tablespoons cornstarch
3 tablespoons water
3 green onions, sliced
Directions:
Add the apple juice, soy sauce, bourbon, ketchup, brown sugar, crushed red pepper flakes, honey, ginger, and fresh garlic into an Instant Pot. Stir until well combined.
Add the chicken and toss until well coated with the mixture.
Cover the pot and cook for 12 minutes on a high setting.
Mix cornstarch and cold water.
Do a quick release, then remove the chicken from the pot onto a chopping board.
Slice the chicken into small cuts.
Press the “Saute” button on the Instant Pot, then pour in the dissolved cornstarch. Stir until well mixed and thick.
Put the chicken pieces back into the pot and stir until well combined.
Garnish with freshly chopped green onions.
Serve hot and enjoy!
