These egg potato boats are one of my go-to breakfasts. Incredibly easy to make, fun and filling breakfast or brunch loaded with sausage, peppers, green onions, and eggs. INGREDIENTS
9 ounces paleo breakfast sausage
8 large eggs
8-10 large potatoes
¼ c. chopped green onion, about 1 bunch
1 tbsp garlic oil
1 bell pepper, diced (not green if needing low FODMAP)
½ tsp salt
HOW TO MAKE PALEO WHOLE30 POTATO EGG BOATS
Step 1: Prepare the oven. Preheat it to 375 degrees. Using parchment paper, line a sheet tray.
Step 2: After washing the potatoes, poke them a few times using a fork. Then, coat the potatoes with a bit of avocado oil. On the prepared sheet tray, place the potatoes and bake in the preheated oven for about 50 to 60 minutes until tender. Remove from the oven when done and allow the potatoes to cool for about 10 to 15 minutes until cool enough to handle.
Step 3: Once the potatoes are cool enough to handle, cut the top off and scoop out the inside slightly leaving just a bit of potato lining the skin. Then, transfer the potatoes to a 13 x 9-inch pan.
Step 4: To make the filling, heat the garlic oil in a large skillet. Then, add the pepper, green onion, and salt. Cook for about 5 to 7 minutes over medium heat. Next, add the sausage and continue to cook for 5 minutes more.
Step 5: Into a large bowl, crack the eggs and scramble. Add the pepper and sausage mixture. Between all the potatoes, evenly divide the mixture and bake for another 40 minutes until the eggs are set.
