This Ina Garten’s Lemon Loaf Cake is perfect to go with your favorite cup of coffee! Breakfast or snacks will be awesome with this delicious treat. Enjoy!

1 ⅓ c sugar, divided
3 Eggs
2 tsp grated lemon zest or 2 tsp lemon extract
1 c plain whole-milk yoghurt or sour cream
2 tsp baking powder
⅓ c freshly squeezed lemon juice
1 ½ c all-purpose flour
½ c vegetable oil
½ tsp pure vanilla extract
½ tsp kosher salt
Glaze Ingredients:
2 tbsp freshly squeezed lemon juice
1 c powdered sugar
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray to an 8 ½-inch loaf pan.
Line the loaf pan with parchment paper.
Brush the prepared pan with butter, then sprinkle flour on it.
In a mixing bowl, sift together salt, flour, and baking powder.
In another mixing bowl, add eggs, vanilla, lemon zest, yoghurt, and 1 cup of sugar. Whisk until well blended.
Transfer the flour mixture into the bowl with the egg mixture, then beat until well incorporated.
Add vegetable oil, then stir until well blended.
Transfer the batter into the prepared loaf pan and spread it evenly.
Place the pan inside the preheated oven and bake for about 50 minutes or until a toothpick comes out clean after inserting it into the middle of the cake.
Meanwhile, add ⅓ cup of lemon juice and the rest of the sugar into a saucepan.
Place the pan on the stove and turn the heat to medium. Stir until well blended. Make sure that the sugar is dissolved completely. Remove from the heat.
Remove the cake from the oven and let it cool at room temperature for about 10 minutes.
Poke small holes over the cooled cake.
Pour the lemon-sugar mixture on top of the cake and spread it evenly. Make sure to fill each hole. Let the cake rest completely.
Meanwhile, in a mixing bowl, add lemon juice and powdered sugar. Stir until well blended.
Pour the mixture on top of the cake and spread it evenly.
Slice the cake into even pieces.
Serve with ice cream, fresh strawberries, or whipped cream. Enjoy!
