Ingredients:
1 tbsp packed brown sugar
1 tbsp dry mustard
1 tbsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked salt, such as this one from Spice House
1 tsp coarsely ground black pepper
½ tsp cayenne pepper
2 racks baby back ribs (about 4 pounds total)
1 c barbecue sauce
Directions:
Add the mustard, brown sugar, garlic powder, paprika, smoked salt, cayenne, onion powder, and black pepper into a mixing bowl. Whisk until well mixed.
Discard the membrane of the ribs. Put the ribs onto a cutting board meat-side down, then use a butter knife to slice in the middle of each rib.
Rub each rib with the spice mixture. Make sure to coat it all over.
Place a trivet into a 6-quart pressure cooker.
Pour in 1 cup of water.
Arrange the ribs over the trivet.
Close the pressure cooker and cook for about 20 minutes on a high setting.
Do a quick release, then transfer the ribs onto a baking sheet.
Brush each rib with the sauce.
Broil the ribs for about 4 minutes or until they turn brown.
Transfer the ribs onto a clean cutting board, then slice them into small pieces.
Serve hot and enjoy!
Note:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 4 days.
