The sauce alone of this dish is more than enough for me. It is so finger-licking good! I usually serve these bad boys over rice. The tenderness of the chicken is superb! Give it a try and prepare to be amazed! Enjoy!
Ingredients:
2 ½ lbs chicken thighs organic skin & boneless
3 tbsp olive oil
½ tsp ginger chopped
5 tbsp raw honey
3 tbsp soy sauce
4 cloves of garlic minced
salt and pepper to taste
fresh parsley chopped for garnish
Directions:
Step 1: In a medium mixing bowl, add in the ginger, soy sauce, olive oil, honey, salt, and pepper. Stir until well combined.
Step 2: Remove the excess fat from the chicken.
Step 3: Put the chicken into the bowl with the marinade and let it rest for at least 1 hour.
Step 4: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 5: Transfer the chicken and marinade in a baking dish or cast iron.
Step 6: Place the baking dish/cast iron inside the preheated oven and bake for 35 to 40 minutes or until done. Make sure to flip the chicken from time to time for a juicier result.
Step 7: Broil the chicken for about 5 minutes over high heat until roasted.
Step 8: Remove from the oven and serve over mashed potato or rice.
Step 9: Pour the sauce on top of the chicken and garnish with parsley.
Step 10: Serve and enjoy!
