Ingredients:
2 lbs carrots cut into 3-inch pieces
½ c butter
2 tablespoons honey
4 garlic cloves minced
½ teaspoon salt
¼ teaspoon fresh ground pepper
Fresh parsley
Directions:
Step 1: Prepare the oven and preheat to 425 degrees F.
Step 2: Put the butter in a skillet and place it inside the oven until melted.
Step 3: Remove the skillet from the oven and add in the garlic and honey. Whisk until well mixed.
Step 4: Toss in the carrots and mix until well coated with the sauce.
Step 5: Put the skillet back into the oven and bake for about 25 minutes or until the carrots are soft and tender.
Step 6: Broil for about 3 minutes or until the carrots are caramelized. This step is optional.
Step 7: Remove from the oven and garnish with chopped parsley.
Step 8: Serve and enjoy!
Notes:
You can melt the butter in a saucepan over medium heat on the stove if you do not have an oven-safe skillet.
You can sauté the garlic in the melted butter as well.
You can use a baking dish instead of a skillet.
