Ingredients:
2 cloves garlic crushed
1-pound chicken breasts
¼ c chicken broth regular sodium
1 tablespoon olive oil
½ c balsamic vinegar good quality
1 teaspoon rosemary fresh, finely chopped
2 tablespoons honey
½ teaspoon salt to taste
¼ teaspoon black pepper
Directions:
Use a meat mallet to gently pound each chicken breast into 1-inch-thick pieces. Slice each to small pieces.
Add the broth, vinegar, garlic, rosemary, salt, and pepper into a mixing bowl. Stir until well blended. Set aside about ½ cup of the mixture for later use.
Pour the rest of the marinade inside a 1-gallon resealable bag. Add the chicken breasts inside the bag and shake it until everything is well combined. Let the chicken breasts marinate for about 30 minutes.
Place a large cast-iron skillet on the stove and turn the heat to medium-high.
Add oil and allow it to become hot.
Remove the chicken from the marinade and shake off any excess.
Add the chicken breasts into the skillet and cook each side for about 3 minutes or until brown.
Place another saucepan on the stove and turn the heat to medium.
Add the reserved marinade into the pan and allow it to boil.
Turn the heat down to low and simmer for about 10 minutes or until it reduces its volume.
Serve the chicken breasts with the glaze. Enjoy!
