This recipe has always been a part of my family since I was a little kid. I remember my Grandma used to make this all the time! I am so grateful to her for a lot of things including this. I have listed all the ingredients and directions so all you have to do is to follow them step by step and you are good to go! You are more than welcome to add more ingredients if you wish. Ingredients:
6 cups fresh peaches, peeled and sliced
2 tablespoons Minute tapioca
2 unbaked pie crusts
2 tablespoons butter softened
⅓ cup flour
1 ¼ cup sugar
cream and sugar
¼ teaspoon cinnamon
Directions:
Prepare the oven and preheat to 218 degrees C or 425 degrees F.
Unroll one pie crust into a 9-inch pie pan.
Use a fork to poke small holes over the crust.
Sprinkle about 2 tablespoons of tapioca on top of the bottom prepared crust.
In a mixing bowl, add cinnamon, flour, and sugar. Stir until well mixed. Add the peaches and stir until just mixed.
Spread the peach mixture over the crust.
Add dollops of butter over the peach mixture.
Put the 2nd crust over the peach layer. Press the sides of the crusts to seal.
Use a knife to slit the top of the 2nd crust.
Brush the 2nd crust with sour cream, then sprinkle granulated sugar over.
Place it inside the preheated oven and bake for about an hour.
Remove from the oven and allow it to rest for about an hour at room temperature.
Serve and enjoy!
