Ingredients:
4 tablespoons olive oil – (or other neutral-tasting oil – such as sunflower or vegetable)
700 g (1 ½ pound) of floury potatoes – such as Maris Piper or Rooster – these will ensure a fluffier chip interior and a crispier exterior.
1 tablespoon cornflour – cornstarch
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Brush with vegetable oil a large metal non-stick baking tray.
Step 3: Slice the potatoes into ⅜-inch-thick pieces.
Step 4: Sprinkle 1 tablespoon of cornflour over the potato slices, then arrange them onto the prepared baking tray.
Step 5: Season the potatoes with ½ teaspoon of paprika, 1 teaspoon of salt, and ½ teaspoon of pepper.
Step 6: Drizzle the remaining oil over the potatoes.
Step 7: Toss the potatoes until well coated with the oil and seasonings.
Step 8: Cover the potatoes with aluminium foil.
Step 9: Bake inside the preheated oven for about 10 minutes.
Step 10: Remove cover and bake for another 10 minutes or until done.
Step 11: Flip the potatoes and bake the other side for 5 more minutes or until golden brown.
Step 12: Remove from the oven.
Step 13: Serve warm and enjoy!
