Ingredients:
½ onion, diced
2-3 slices provolone cheese
2 soft sub rolls
2-½ tsp lemon pepper seasoning
1 ½ tsp Cajun seasoning
2 tbsp butter
4 tbsp mayonnaise
½ tbsp kosher salt
1 lb. of fresh chicken tenders, diced into chunks
1 tsp freshly ground black pepper
2 tbsp canola oil
Directions:
Sprinkle salt, pepper, Cajun seasoning, and lemon pepper over the chicken slices. Toss until well coated.
Place a pan on the stove and turn the heat to medium-high.
Add 2 tbsp of oil and 2 tbsp of butter, then allow them to become hot.
Add the chicken pieces and onions into the hot pan, then cook for about 8 minutes or until brown.
Reduce the heat to medium, then add the cheese slices over the chicken and allow them to melt. (Cover the pan with the lid.)
Spread a generous amount of mayonnaise on both sides of the roll.
Spoon the chicken mixture, onion, and cheese over each prepared bun.
Serve and enjoy!
Notes:
Feel free to use mozzarella cheese or Monterey Jack cheese for this recipe.
You can add bell peppers, mushrooms, or bacon if you wish.
Top each with a slice of tomato and lettuce.
I always serve these sandwiches with fries.
