Hot, cheesy, and delicious! This broccoli and Cheddar soup are very soothing. Serve it with garlic bread and you got yourself a meal to warm your soul! I can’t think of any reason why you shouldn’t give this a try. I’ve cooked a lot of soup in my life, but this one just hit me straight to heart. I love every sip of this soup. I’m sure you will too!
Ingredients:
3 tablespoons butter
¼ small onion, chopped
2 tablespoons all-purpose flour
1 cup half-and-half
1 ½ cups chicken broth
salt and ground black pepper to taste
2 cups chopped broccoli
1 carrot, chopped
1 celery stalk, chopped
1 ¼ cups shredded mild Cheddar cheese
Directions:
Step 1: Place a stock-pot on the stove and turn the heat to medium-high.
Step 2: Add the butter and allow it to melt.
Step 3: Add the chopped onion and sauté’ for 3 to 4 minutes or until translucent.
Step 4: Add flour and stir for 5 minutes or until the colour of the mixture becomes golden brown.
Step 5: Gently add half-and-half into the mixture and stir until well mixed.
Step 6: Pour in the chicken broth and season with salt and pepper to taste.
Step 7: Simmer on medium-low heat for 10 minutes or until the mixture becomes thick.
Step 8: Add carrot, celery, and broccoli. Continue to simmer for 20 minutes or until the veggies are tender.
Step 9: Reduce to low heat and add Cheddar cheese and cook for 5 minutes or until the cheese has melted completely.
Step 10: Remove from the heat and serve right away. Enjoy!
Note:
Add more water about ¼ cup, if the soup is too thick.
