Ingredients:
MUFFINS:
2 ½ c all-purpose flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
1 ¼ c brown sugar
½ (1 stick) c unsalted butter, softened
1 large Egg
2 tsp vanilla extract
1 c buttermilk
1 ½ c fresh or frozen blueberries, plus ¼ c to press on top
CRUMBLE:
⅓ c granulated sugar
¼ c all-purpose flour
2 tsp ground cinnamon
2 tbsp butter, softened
Directions:
Step 1: Prepare the oven and preheat to 220 degrees C or 42 degrees F.
Step 2: Apply cooking spray or line with liners twelve muffin cups.
Step 3: Add the flour, baking powder, baking soda, and salt into a medium mixing bowl. Whisk until well mixed.
Step 4: In the bowl of a stand mixer, add the egg, butter, buttermilk, sugar, and vanilla extract. Beat until well mixed.
Step 5: Add the blueberries and stir until just mixed.
To Make the Crumble:
Step 1: Add the flour, butter, sugar, and cinnamon into a small mixing bowl. Stir until well mixed and the texture becomes crumbly.
Step 2: Scoop the batter into the greased or lined muffin cups, then sprinkle each cup with the crumb mixture.
Step 3: Divide the remaining ¼ cup of blueberries among each cup. Press it on top of each cup.
Step 4: Place the muffin cups inside the preheated oven and bake for about 5 minutes.
Step 5: Turn the heat down to about 350 degrees C and bake for another 12 minutes or until a toothpick comes out clean after inserting it in the middle.
Step 6: Remove from the oven and allow them to cool at room temperature.
Step 7: Serve and enjoy!
