Ingredients:
2 tbsp toasted sesame oil
4 c steamed broccoli or green beans
2 pounds boneless, skinless chicken breasts
Sauce
2 tsp fresh grated ginger
½ tbsp orange zest
1 tsp garlic powder
½ tsp pepper
2 c orange juice
¼ c coconut aminos
3 tbsp honey
¼ c chicken broth, optional – no salt added
Directions:
Rinse the chicken with water to clean, then slice them into 1-inch pieces.
Place a large frying pan on the stove and turn the heat to medium. Add sesame oil and allow it to become hot.
Add the chicken slices into the pan, then cook all sides for about 12 minutes or until they turn golden brown.
In a mixing bowl, add all the ingredients to the sauce. Stir everything until well blended.
Transfer the cooked chicken into another mixing bowl.
In the same pan, add the sauce. Scrape the bottom to get the browned bits. Allow the mixture to boil for about 15 minutes or until the texture becomes thick. Make sure to stir from time to time.
Put the cooked chicken back into the pan, then toss until well coated with the delicious sauce.
Sprinkle each serving with sesame seeds on top to garnish.
Serve right away over rice. Enjoy!
Instant Pot:
In a mixing bowl, add honey, garlic powder, lemon zest, ginger, orange juice, and coconut aminos. Stir until well blended.
Press the “Sauté” button on the Instant Pot.
Add 2 tbsp of sesame oil and allow it to become hot.
Add the chicken breasts, then cook each side for a few minutes until brown. Transfer onto a clean plate and slice them into small cuts.
Put the chicken slices back into the Instant Pot together with the sauce, then stir until well combined. Pressure cook for about 3 minutes.
Add slurry and stir until well blended. Allow the sauce to become thick.
Serve and enjoy!
