These heavenly treats will surely make your day extra special! Oh, man, you have got to bite your teeth into these delicious muffins! Ingredients:
Dry ingredients
1 ½ c whole wheat pastry flour or all-purpose flour*
1 ½ tsp baking powder
½ tsp baking soda
¼ tsp salt
2 tbsp poppy seeds
Wet ingredients
Zest from 2 large lemons (about 2 tablespoons)
½ c honey
2 large Eggs
½ c plain or vanilla greek yoghurt (I recommend whole milk or 2% yoghurt)
2 tbsp freshly squeezed lemon juice (from 1 large lemon)
½ tsp almond extract (feel free to skip if you don’t have it)
¼ c butter, melted and cooled (or sub olive oil)
Optional:
¾ c blueberries
For the glaze:
⅓ c powdered sugar
1 tablespoon low sugar blueberry preserves (or jam of choice)
1 tsp lemon zest
1 tsp fresh lemon juice
½ tbsp melted butter
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Line with muffin liners a 12-cup muffin tin.
Apply cooking spray over each muffin cup.
In a mixing bowl, add the baking powder, whole wheat pastry flour, poppy seeds, baking soda, and salt. Whisk until well mixed.
In another mixing bowl, add the eggs, lemon zest, lemon juice, honey, almond extract, and yoghurt. Stir until well mixed.
Transfer the dry ingredients into the wet ingredients, then stir until well combined.
Add the melted butter and stir until well blended.
Fill each muffin cup with the batter.
Place them inside the preheated oven and bake for about 15 minutes or until a toothpick comes out clean after inserting it in the middle.
Remove from the oven and allow them to cool at room temperature.
Meanwhile, add blueberry jam, powdered sugar, lemon juice, lemon zest, and melted butter into a mixing bowl. Stir until well blended.
Spread the glaze over each muffin.
