I love this recipe to make oven-baked fajitas. This healthy chicken fajita casserole is hands-down the best dinner that your family deserves! An amazing weeknight meal with pretty colors and superb flavors! You can even prep this casserole ahead and keep it in the fridge until ready to bake. Feel free to easily double the recipe if feeding a crowd. I use a 9 x 13-inch pan. You can also use two casserole dishes. On top is tons of melted cheese which I love! If desired, you can add some diced green chilies. If you love spicy food, you can spice this casserole with hot sauce, a pinch of cayenne pepper, or jalapeno peppers.
Ingredients
1 small onion, sliced
6 (4 to 6 oz. each) boneless, skinless chicken thighs, or breasts, cut into 1-inch to 2″ pieces
1 tbsp olive oil
4 bell peppers, sliced (vary the colors)
1 c. sour cream
4 oz. of cream cheese, softened
1 recipe of Taco Seasoning Mix or our Fajita Seasoning
Optional: garnish with avocado or guacamole, sour cream, and salsa. Or add hot sauce if you love spicy food.
2 c. cheddar cheese, grated
How to make Healthy Chicken Fajita Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: Heat the olive oil over medium heat. Then, add the chicken and cook until done. Set the chicken aside when done.
Step 3: Into the same skillet, saute the onions and peppers until tender.
Step 4: Return the chicken to the pan, then add the taco seasoning, sour cream, and cream cheese. Toss to coat.
Step 5: Sprinkle the chicken with cheese and transfer it to the preheated oven. Bake for about 20 minutes or until the cheese is bubbly.
