This recipe has always been a part of my family since I was a little kid. I remember my grandma used to make these delicious muffins all the time! I would always go to her house on weekends just to eat all her delicious dishes! I am so grateful to her for a lot of things including this recipe. Now, I get to share it with you as well. How awesome is that? I have listed all the ingredients and directions so all you have to do is to follow them step by step and you are good to go! Ingredients:
12 large Eggs
½ c milk (I used skim)
½ tsp salt
¼ tsp black pepper
¼ tsp garlic powder
¾ c shredded cheddar cheese divided
8 ounces ham steak cubed
2 green onions sliced thin
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray in a muffin tin, then set it aside.
Add milk, eggs, and spices into a large mixing bowl. Whisk until well mixed.
Add ham, green onions, and ½ cup of shredded cheese. Stir until well mixed.
Fill the muffin tins with the mixture.
Sprinkle the rest of the cheese over each muffin.
Place them inside the preheated oven and bake for about 30 minutes or until done.
Remove from the oven and allow the muffins to cool at room temperature.
Serve warm and enjoy!
