If you are looking for a new and easy recipe, then, you have got to try this one! In just about 2 hours, you will surely have the best dish ever! By the way, try adding a bit of chilli powder for that awesome kick. Just do it and thank me later!
Ingredients:
¼ c canola oil
2 lbs chicken skinless chicken thigh
8 ounces smoked sausage
¼ c unsalted butter
½ c flour
1 medium onion diced
2 tsp minced garlic
1 medium green bell pepper diced
1 c chopped celery (about 3 sticks)
½ lb crab legs
1 tbsp Creole seasoning.
1 tbsp chicken bouillon powder or 1 cube
½ tbsp smoked paprika
1 tbsp thyme fresh or dried
2 bay leaves
1 14- ounces can tomatoes (chopped)
6 c chicken stock (sub with water)
1 lb shrimp (peeled and deveined)
1 tbsp gumbo file
2 green onions, chopped
¼ c chopped parsley
Directions:
Sprinkle salt and pepper all over the chicken.
Place a Dutch oven on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add the chicken and sear each side until brown.
Add the sausage and cook until brown as well. Remove them from the pot.
In the same pot, add butter, flour, and oil. Stir until well combined.
Cook for 30 minutes or until the colour turns dark brown. Remove from the heat and allow it to cool.
Put the pot back to the heat. Add onion, garlic, celery, and green pepper. Saute until aromatic and translucent.
Put the sausage and chicken back to the pot as well as the creole seasoning, crab legs, paprika, thyme, bay leaves, and chicken cubes. Stir until well combined, then cook for about 5 more minutes.
Add 6 cups of stock and tomatoes. Stir until well combined.
Allow the mixture to boil, then simmer for about 50 minutes.
Add the shrimp and cook for about 5 minutes.
Add the green onions, file powder, and chopped parsley. Stir until well mixed.
