Flavorful, hearty, and the perfect gluten-free meal. This Ground Turkey Sweet Potato Skillet is an easy dinner made in a single skillet. This skillet meal is an excellent dinner that even your picky eaters will love! For this recipe, you can use either ground chicken, extra lean ground beef, fresh turkey, or hot Italian sausage. As for the potatoes, you are welcome to use Yukon gold instead of sweet potatoes. If desired, you can even add sweet bell peppers!
Ingredients
2 tbsp olive oil
1 lb. ground turkey
1 c. onion, diced
3 small or 2 large sweet potatoes, peeled and diced (about 3 c.)
1 yellow bell pepper
½ c. mozzarella, shredded
¼ c. cilantro, chopped
1.5 tbsp ground cumin
1 tsp chili powder
½ tsp salt
½ c. water
¼ tsp pepper
1 tbsp garlic, minced
How to make Ground Turkey Sweet Potato Skillet
Step 1: Heat the olive oil in a large cast-iron skillet over medium-high heat. Once hot, add the garlic and saute for about a minute. Add the ground turkey and continue to cook, breaking the turkey apart using a wooden spoon until browned. This takes another 8 minutes.
Step 2: Add the cumin to the skillet along with the chili powder, salt, and pepper. Stir well.
Step 3: Next, add the onion and bell pepper. Cook for another 3 to 4 minutes before adding in the diced sweet potato and water. Stir well and put the lid on. Continue to cook for an additional 6 to 8 minutes or until the sweet potatoes are tender. If needed, pour in extra water to prevent the meat from drying out.
Step 4: Take the lid off and season with more salt and pepper if needed.
Step 5: Sprinkle the dish with shredded mozzarella and let it melt. Then, take the skillet off the heat.
Step 6: Serve the Ground Turkey Sweet Potato Skillet right away garnished with some fresh cilantro. Enjoy!
