This incredible recipe was introduced to me by my dear friend, Anita. Oh, man, I am so glad that I gave it a try because I never would have tasted how awesome it is! You need to try this, friends. You just do! Enjoy!
Ingredients:
1 pound ground beef
½ onion, diced
3 cloves garlic, minced
½ c green bell pepper
½ c red bell pepper
14.5 ounces diced tomatoes
¾ c white rice, I use Jasmine
2 c beef broth
2 tablespoons tomato paste
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
1 ½ c cheese
1 tablespoon parsley
Directions:
Step 1: Place a skillet on the stove and turn the heat to medium.
Step 2: Add the ground beef, onion, and garlic. Cook for a few minutes until the meat is brown and the onions and garlic are aromatic and translucent.
Step 3: Remove any excess grease.
Step 4: Add the sliced tomatoes, bell peppers, beef broth, rice, Italian seasoning, tomato paste, salt, and pepper. Stir until well mixed, then allow the mixture to boil.
Step 5: Turn the heat down to low. Cover the skillet and allow the mixture to simmer for 18 minutes or until the rice is soft.
Step 6: Use a fork to fluff the rice, then sprinkle shredded cheese on top.
Step 7: Cover the skillet and allow the cheese to melt.
Step 8: Remove from the heat and sprinkle fresh parsley on top.
Step 9: Serve and enjoy!
