I am obsessed with this version of my favorite Grilled Cheese sandwich! A fun, delicious version made with zucchini, shredded cheddar, jalapenos, and bacon. First, we make zucchini boats and stuffed them with the zucchini insides with jalapenos and powdered garlic. Then, the filling is covered with shredded cheddar. Roll the bacon slices on the zucchini tops. Bake them at the same time and assemble them before serving.

Ingredients
olive oil
4 zucchini
2 c. of shredded cheddar
2 jalapeños
12 slices of bacon
salt & pepper
powdered garlic
How to make Grilled Cheese Zucchini
Step 1: Start by laying the zucchini flat. Then, cut the top side off and dig out the interior to make a zucchini boat.
Step 2: Cook the insides of the zucchini in a pan with the minced jalapeno, garlic powder, olive oil, salt, and pepper.
Step 3: Stuff the zucchini boats with the mixture and top with shredded cheddar.
Step 4: Roll 3 bacon slices on each zucchini lid and place everything on a parchment-lined sheet pan.
Step 5: Place the sheet pan in the oven and bake at 350 degrees F for about 20 minutes.
Step 6: Remove from the oven when done and cover the zucchini boats with the bacon-wrapped lids. Serve immediately. Enjoy!
