Do you want to eat spaghetti without worrying about calories? This Stuffed Spaghetti Squash is very low in calories! You can freely eat a lot of them in one sitting. This dish is insanely flavorful as well! With these very simple ingredients, lunch or dinner will be awesome again. Enjoy!
Ingredients:
olive oil, as needed
½ c fresh or frozen corn
½ c Mexican cheese blend
¼ c crema
½ c green enchilada sauce
1 (4 ounces) can dice green chiles
2 c cooked chicken, shredded
1 large spaghetti squash, cut in half lengthwise
kosher salt and freshly ground pepper, to taste
1 green onion, thinly sliced
fresh cilantro, garnish
1 tsp chili powder, plus more for garnish, optional
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Line with parchment paper a baking sheet.
Drizzle olive oil over the spaghetti squash, then sprinkle them with salt and pepper to season.
Add spaghetti squash onto the prepared baking sheet.
Place the baking sheet inside the preheated oven and bake the squash for about 35 minutes or until soft. Let cool at room temperature.
Remove the insides of the squash, but make sure to leave a ½-inch space on the sides and bottom. Put the insides into a colander.
In a mixing bowl, add green onion, chicken, enchilada sauce, crema, green chilis, chili powder, corn, and ¼ cup chopped cilantro. Stir until well blended.
Add the insides of the squash into the same bowl, then stir until well combined.
Fill the prepared squash with the mixture.
Sprinkle American cheese over the Stuffed Spaghetti Squash.
Bake in the preheated oven for about 15 to 20 minutes or until done.
Serve right away and enjoy!
