Ingredients:
Greek Chicken & Marinade:
2 tablespoons olive oil, plus 1 teaspoon for cooking
1 teaspoon garlic powder
½ teaspoon thyme
1-½ lbs. fresh chicken breast, sliced in half to make thinner
3 tablespoons lemon, juice of one lemon
1 tablespoon white wine vinegar
½ teaspoon black pepper
1 teaspoon kosher salt *use half if not using Kosher Salt
2 tablespoons oregano
Greek Cucumber Salad & Rice:
1 tablespoon olive oil
23 Kalamata olives, sliced in half, black olives will work too
1 teaspoon Kosher salt *salt to taste if not using kosher salt
2 c chopped cucumber English cucumber or baby cucumbers
¼ teaspoon dill weed, dried
¼ small red onion, diced small
½ c crumbled feta cheese
1 teaspoon oregano, dried
2 tablespoons white wine vinegar
pepper to taste
1 teaspoon garlic powder
4 Roma tomatoes’ flesh removed, chopped
2 c white rice, cooked salted & peppered to taste
Directions:
Greek Chicken Marinade:
Add all the ingredients for the marinade to a large resealable bag. Shake the bag until well blended.
Add the chicken to the bag, then shake it again until well-coated with the marinade.
Refrigerate for about 30 minutes or overnight. I suggest you marinate the chicken overnight.
Remove the chicken from the bag and shake off any excess marinade.
Put a large skillet on the stove and turn the heat to medium.
Add 1 teaspoon of oil and allow it to become hot.
Add the chicken, then cook each side for about 4 minutes or until they turn golden brown.
Transfer the chicken onto a clean plate. Set aside. Slice the chicken into small portions.
For the Greek Cucumber Salad:
In a mixing bowl, add all the ingredients for the cucumber salad. Stir until well blended.
For the Greek Chicken Bowls:
In a serving bowl with ½ cup of rice, add ¾ cup of the cucumber salad and 4 oz. of chicken slice on top.
Add feta cheese and fresh herbs on top garnish.
Serve right away and enjoy!
