Ingredients:
1 c butter, softened
1 c confectioners’ sugar
1 tsp vanilla extract
2 c cake flour
1 c chopped pecans
½ c confectioners’ sugar for rolling
Directions:
Prepare the oven and preheat to 165 degrees C or 325 degrees F.
Add butter, vanilla, and 1 cup of confectioners’ sugar into a large mixing bowl. beat until well mixed and creamy.
Add the cake flour and pecans. Stir until well mixed.
Form 1-inch balls out of the mixture.
Arrange the balls onto a cookie sheet. Make sure to leave a space between each ball.
Place them inside the preheated oven and bake for about 15 minutes or until brown.
Remove the cookies from the oven and allow them to cool completely at room temperature.
Sprinkle confectioners’ sugar on top.
