This recipe has always been a part of my family since I was a little kid. I remember my Grandma used to make these delicious pancakes all the time! You should have seen her worked around the kitchen. Oh, man, she was a wizard! She could turn something very simple into something awesome! These pancakes are just an example! I am so glad that she taught me this recipe because now, I get to share it with you as well. How awesome is that? Anyway, I have listed all the ingredients and directions so all you have to do is to follow them step by step and you are good to go! Feel free to add more ingredients to this if you prefer. Ingredients:
6 medium potatoes, peeled and shredded
2 tbsp all-purpose flour
¼ tsp baking powder
2 Eggs
¼ c vegetable oil
½ c finely chopped onion
½ tsp salt
¼ tsp pepper
Directions:
Add eggs, baking powder, flour, salt, and pepper into a large mixing bowl. Beat until well mixed.
Add the onion and potatoes, then stir until well combined.
Place a large skillet on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Spoon the batter and drop each into the hot skillet. Use a spatula to flatten them out. Cook each side for 3 minutes or until crispy and brown.
Make sure to cook the batter in batches to prevent overcrowding.
Place the pancakes onto a serving plate.
Serve immediately and enjoy!
