Meatballs and zucchini noodles in one serving! What’s not to like? In just 30 minutes, you can have the most satisfying dish to serve today. Enjoy!
Ingredients:
½ c shredded mozzarella (or cheddar, provolone)
Juice of ½ lemon
4 medium zucchinis, spiralled
4 cloves garlic, grated + 2 cloves garlic, minced
3 tbsp butter
1 tsp Italian seasoning
½-pound (220g) ground turkey meat
Salt and fresh cracked black pepper, to taste
½-pound (220g) ground pork meat
1 tbsp hot sauce of your choice (we used Sriracha)
1 c fresh chopped cilantro (or parsley), divided
1 crumbled bouillon cube, optional
½ tsp red crushed chili pepper flakes, optional
Directions:
Add ground pork, cheese, bouillon cube, ground turkey, black pepper, grated garlic, Italian seasoning, red chili pepper flakes, and chopped cilantro into a mixing bowl. Use your clean hands to mix everything until well incorporated. Make meatballs out of the mixture, then place them onto a clean plate.
Place a large skillet on the stove and turn the heat to medium-low.
Add 2 tbsp of butter and allow it to melt.
Add the meatballs into the hot skillet, then cook for about 10 minutes on all sides or until they turn brown. Transfer the meatballs onto a clean plate.
In the same empty skillet, add the rest of the butter and allow it to melt.
Add lemon juice, red pepper flakes, minced garlic, and hot sauce into the skillet. Stir until well blended.
Add the zucchini noodles into the skillet, then cook for about 3 minutes or until done. Season with salt and pepper if needed.
Move the noodles to one side of the skillet, then put the meatballs to the other side. Reheat the meatballs for a few minutes.
Sprinkle freshly chopped cilantro on top to garnish.
Serve with a lemon slice. Enjoy!
