Ingredients:
3 cloves garlic – minced
2 tbsp grass-fed butter — melted – use ghee if you’re doing whole30
5 lamb loin chops
1 tsp fresh thyme – chopped
kosher salt and freshly ground black pepper
Directions:
Let the loin chops rest at room temperature for about 30 minutes before cooking.
Use paper towels to pat dry the loin chops.
Rub the loin chops with salt and pepper until well coated.
Place a 12-inch cast-iron skillet on the stove and turn the heat to medium-high.
Add the loin chops and sear each side for about 5 minutes or until crispy and brown.
Spoon the grease on top of the lamb over medium-low heat.
Add 2 tbsp of butter, thyme, and garlic. Allow the butter to melt.
Spoon the melted butter over the loin chops.
Remove from the skillet onto serving plates.
Pour the delicious sauce over each serving. Enjoy!
Notes:
Feel free to use other types of skillets if you do not have a cast-iron one.
