With this very simple set of ingredients, you will surely have the best breakfast today! Oh, man, you are so in for a treat! Ingredients:
1 tsp sesame oil
2 cloves garlic minced or pressed
4 tbsp olive oil or butter divided
½ yellow onion diced
2 tbsp soy sauce
2 tbsp seasoned rice vinegar
½ c diced carrot
2 large eggs beaten
2 tbsp hoisin sauce
3 c leftover unseasoned cooked rice chilled
cilantro, green onions, sesame seeds, sriracha for garnish, if desired
½ tbsp chilli garlic sauce plus more to taste
½ c frozen peas
salt to taste
½ tsp ground ginger
½ tsp black pepper
Directions:
Place a large skillet on the stove and turn the heat to medium.
Add 2 tbsp of butter and allow it to melt.
Add the carrot, garlic, ginger, and onion. Sauté until soft and aromatic. Season with black pepper.
Push the sauteed veggies to one side of the skillet, then add the rest of the butter and allow it to melt.
Add the egg, then scramble for a few minutes
Stir everything until well combined.
Add the cooked rice, chilli garlic sauce, peas, soy sauce, vinegar, and hoisin. Toss everything until well combined.
Cook for a few minutes. Make sure to stir from time to time.
Drizzle sesame oil, then season with salt to taste.
Sprinkle your preferred herbs on top to garnish.
Serve and enjoy!
