Ingredients:
4 c cooked and chilled rice (I prefer short-grain white rice)
3 cloves garlic, minced
2 Eggs, whisked
2 medium carrots, peeled and diced
3 tbsp butter, divided
1 small white onion, diced
3–4 tbsp soy sauce, or more to taste
½ c frozen peas
3 green onions, thinly sliced
½ tsp toasted sesame oil
salt and black pepper
2 tsp oyster sauce (optional)
Directions:
Place a large pan on the stove and turn the heat to medium-high.
Add ½ tbsp of butter and allow it to melt.
Add the egg and beat until scrambled. Remove from the pan onto a clean plate.
In the same pan, add 1 tbsp of butter and allow it to melt.
Add the onion, carrots, garlic, and peas. Sauté until soft and aromatic. Sprinkle salt and pepper to taste.
Turn the heat up to high, then add the rest of the butter and allow it to melt.
Add the green onions, rice, oyster sauce, and soy sauce. Stir until well mixed. Stir fry for about 3 minutes or until the rice is a bit crispy.
Put the scrambled eggs back into the pan and stir until well mixed.
Remove the pan from the stove, then drizzle sesame oil on top. Toss until well combined.
Add more seasonings if necessary.
Serve hot and enjoy!
Notes:
Feel free to add more ingredients to this recipe if you wish.
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 3 days.
