Ingredients:
Crust:
1 ¼ c all-purpose flour
¼ teaspoon sea salt
1 tablespoon granulated sugar
½ c shortening chilled
3-4 tablespoons ice water
Chocolate Silk Pie Filling
¾ c butter softened
¼ c granulated sugar
1 c powdered sugar
4 ounces semi-sweet chocolate melted
1 teaspoon pure vanilla extract
Pinch of sea salt
3 eggs room temperature
¾ c whipping cream whipped (measured in a liquid state, then whipped)
Whipped topping
1 ¼ c whipping cream measured in a liquid state, then whipped
½ c powdered sugar
1 teaspoon pure vanilla extract
Directions:
For the Crust:
In a food processor, add flour, sugar, and salt. Pulse until well mixed.
Add the cold water and shortening. Pulse until sticky.
Sprinkle flour onto a flat surface, then place the dough on it. Shape the dough into a ball.
Wrap the dough with plastic wrap, then place it inside the fridge to chill for about an hour or overnight.
Prepare the oven and preheat to 225 degrees C or 450 degrees F.

Roll the dough to flatten, then place it into a 9-inch deep round pie plate and press it to make a crust.
Use a fork to prick the top of the dough.
Place it inside the preheated oven and bake for about 10 minutes or until the top turns brown.
Remove from the oven and allow it to cool completely.
For the Whipped Cream Filling:
In a mixing bowl, add ¾ cup of whipping cream and beat until it forms stiff peaks.
Place the whipped cream inside a resealable container, then place it inside the fridge to chill.
For the Whipped Topping:
In a standing mixer, add powdered sugar, 1 ¼ cups of whipping cream, and vanilla. Beat until well mixed. The texture must be thick and it should form stiff peaks.
Move the mixture inside a large piping bag, then place it inside the fridge to chill.
For the Chocolate Filling:
Place the chocolate inside the microwave and heat it until melted.
Remove from the microwave and allow it to cool completely.
In a mixing bowl, add powdered sugar, vanilla, and butter. Beat until well mixed.
Add the melted chocolate and beat until well mixed. Make sure to scrape the sides as well.
Add the eggs gradually and beat every addition until well blended.
Add ¾ cup of whipping cream and beat until well mixed.
To Assemble the French Silk Pie:
Spread the chocolate filling over the pie crust.
Decorate with the whipped topping. ( Let your imagination work. )
Place it inside the fridge to chill for about 4 hours or overnight.
