Ingredients:
Crust:
1 ¼ cups all-purpose flour
¼ tsp sea salt
1 TBS granulated sugar
½ cup shortening chilled
3-4 TBS ice water
Chocolate Silk Pie Filling:
¾ cup butter softened
¼ cup granulated sugar
1 cup powdered sugar
4 oz semi-sweet chocolate melted
1 tsp pure vanilla extract
Pinch of sea salt
3 eggs room temperature
¾ cup whipping cream whipped (measured in a liquid state, then whipped)
Whipped topping:
1 ¼ cups whipping cream measured in a liquid state, then whipped
½ cup powdered sugar
1 tsp pure vanilla extract
Directions:
How To Make the Crust:
Step 1: Add the sugar, flour, and salt to the food processor. Pulse until well mixed.
Step 2: Add cold water and shortening and pulse until well mixed and sticky.
Step 3: Remove the dough from the food processor and form small balls out of it.
Step 4: Cover the balls with plastic wrap and place inside the fridge to chill for 1 hour to overnight.
Step 5: Prepare the oven and preheat to 230 degrees C or 450 degrees F.
Step 6: Sprinkle flour on a flat surface and roll out the dough. Transfer the dough into a 9-inch round pie plate. Press the sides to make the crust.
Step 7: Place inside the preheated oven and bake for 10 to 12 minutes or until slightly brown. Pop the bubbles that form.
Step 8: Remove from the oven and set aside to cool.
How To Make The Filling:
Step 1: Add ¾ cup of whipping cream in a standing mixer. Whisk on high speed until well soft peaks form.
Step 2: Place the whipped cream in a resealable bag and place it inside the fridge.
How To Make the Whipped Topping:
Step 1: Add powdered sugar, vanilla, and 1 ½ cups of whipping cream into the standing mixer. Beat until thick at low speed.
Step 2: Beat for another 2 minutes at high speed.
Step 3: Transfer it into a piping bag and place it inside the fridge.
How To Make the Chocolate Filling:
Step 1: Place the chocolate in an oven-safe bowl. Place it inside the microwave and allow it to melt.
Step 2: Add the sugar, butter, and vanilla in an electric mixer and beat for 3 minutes or until the sugar has dissolved completely.
Step 3: Add in the melted chocolate and beat for another 1 minute.
Step 4: Add eggs gradually and beat at medium speed every addition.
Step 5: Add ¾ cup of whipping cream and beat until well mixed.
Assembling the French Silk Pie:
Step 1: Spread the chocolate filling over the pie crust.
Step 2: Pipe the whipped topping over.
Step 3: Place inside the fridge to chill for 4 hours to overnight.
