Ingredients:
Pork Chops
4 pork chops centre-cut, bone-in
Salt/Pepper, to taste
2 tbsp flour
2 tbsp olive oil
4 slices gruyere or swiss cheese, optional
French Onion Sauce
6 tbsp Butter, Separated
2 large yellow onions, sliced ¼ inch thick
1 tbsp flour
8 ounces button mushrooms, sliced
2 cloves garlic minced
⅓ c dry white wine
1 ¼ c chicken broth
1 sprig fresh Thyme, or 1 tsp dried thyme
Directions:
For the Pork Chops:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Season with salt and pepper on all sides of the pork chops.
Coat them well with flour.
Place a skillet on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add the pork chops and sear each side for 2 minutes or until golden brown.
Remove from the skillet and arrange them onto a baking sheet.
Place the pork chop inside the preheated oven and bake for about 15 minutes or until done.
To Make the French Onion Sauce:
Add butter into the same skillet and allow it to melt.
Add the onions and stir until well coated with the melted butter. Allow the onions to caramelize.
Add the rest of the butter and mushrooms. Stir and cook until soft.
Add the garlic and saute until aromatic.
Add 1 tbsp of flour and toss until well mixed.
Add the wine and stir until well blended. Simmer for about 5 minutes. Scrape the bottom to get the brown bits.
Add the thyme and broth. Stir until well blended.
Turn the heat down to low and simmer until the texture becomes thick.
Add the baked pork chops and toss until well coated with the sauce.

Note:
Feel free to add cheese over each pork chop and allow it to melt inside the oven.
