Ingredients:
3 medium sweet onions (about 2 lbs), halved lengthwise and thinly sliced crosswise
3 tbsp olive oil
1 tbsp unsalted butter
1 tsp minced garlic
1 tsp salt
½ tsp black pepper
½ c sherry or dry white wine
1 tbsp fresh thyme leaves
1 tbsp fresh chopped parsley
2 c water
2 c beef broth
1 tbsp Worcestershire sauce
12 oz uncooked linguine, broken in half
1 c grated Parmesan cheese
1 c grated Gruyere or Swiss cheese
Garnish with fresh thyme sprigs, chopped fresh parsley (optional)
Directions:
Place a large skillet on the stove and turn the heat to medium-high.
Add the butter and olive oil, then allow them to melt and become hot.
Add the onions and sauté for 15 minutes.
Add the garlic and sauté for another 5 minutes or until aromatic. Season with salt and pepper to taste.
Add the sherry and stir until well mixed. Make sure to scrape the bottom to get the brown bits.
Add beef broth, water, parsley, Worcestershire sauce, and thyme leaves. Stir until well combined.
Add the linguine and stir until well combined.
Allow the mixture to boil for about 10 minutes or until the pasta is al dente.
Remove from the heat and cover it with a lid for another 3 minutes.
Add the Gruyere, Parmesan cheese, chopped parsley, and thyme sprigs. Stir until well combined.
Serve hot and enjoy!
