Ingredients:
2 cups heavy cream
2 cups milk
½ cup freshly grated Parmesan
¼ cup white wine
Pinch crushed red pepper flakes
2 ½ cups shredded Gruyere, divided
1 baguette, thinly sliced
4 cloves garlic, minced
1 pound fettuccine
6 tablespoons butter, divided
2 large yellow onions, thinly sliced
4 tablespoons all-purpose flour
1 teaspoon fresh thyme leaves
Kosher salt
Freshly ground black pepper
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
Add the pasta and a bit of salt, then cook for a few minutes or until firm to bite. Drain and rinse with cold water to stop the cooking process.
Place a large skillet on the stove and turn the heat to medium.
Add 2 tbsp of butter and allow it to melt.
Add the onions, then stir and cook for 30 minutes or until caramelized.
Pour in the wine, then stir until well blended. Simmer for about 5 minutes or until the wine evaporates.
Place another skillet on the stove and turn the heat to medium.
Add 4 tbsp of butter and allow it to melt.
Add the garlic, then sauté for about a minute or until aromatic.
Add flour, then whisk and cook for one more minute to remove the raw taste.
Add milk and cream, then stir until well blended. Allow the mixture to simmer.
Add thyme and Parmesan cheese, then stir until well mixed. Simmer for 5 more minutes or until the texture of the sauce becomes thick. Stir in red pepper flakes, salt, and pepper.
Add the cooked pasta, then toss until well coated with the delicious sauce.
Add the caramelized onions and 1 cup of Gruyere cheese on top of the pasta.
Place it inside the preheated oven and bake for about 20 minutes or until the cheese has melted completely.
Add the baguette slices and the rest of the Gruyere cheese on top.
Broil for 5 more minutes or until the top turn golden brown.
